Soft Pumpkin Cookies With Sprinkles

Tiny bites packed with warm spices that also are a gem to behold.

Something about a spooky tea party, especially this time of year, just seems so...cool! I had recently purchased a new tarot card deck from Gold Lyre Tarot and wanted to feature some of the awesome graphics on the cards. So what would be perfect for afternoon tea and tarot readings? Pumpkin cookies encrusted in gem like sprinkles of course!


Wicked soft texture

These cute little cookies are cake like in texture, but have a nice crunchy outside due to the sprinkles. For these I used Fancy Sprinkle's Freak Show mixture to make the cookies look like a pile of gemstones and give a more Halloween vibe. These can of course be made without the sprinkles, or add your favorite glaze instead!

killer spice flavor

Yes, this is a killer (phenomenal) spice mixture. When I make something pumpkin spice flavor I want it to floor you, not leave you searching for a hint of cinnamon. I love to use a combo of cinnamon, allspice, clove, nutmeg and mace. It provides a richer spice experience in my opinion. If you don't have all of them and don't want to buy them, not a big deal! Just make sure to supplement the serving with the other spices you have. It will still make a delicious cookie.

fast as hell

These are the type of cookies to whip up when you need a sugar fix in a hurry. NO overnight chilling, NO patiently waiting. The cookies bake in roughly 7 minutes! Instead of whipping the butter, it is melted instead similar to a brownie recipe. The dough comes together really fast and using one bowl for minimum mess.


You can also pre roll the cookies and freeze them for a later date. To reheat bake at 350℉ for 10 minutes.

Makes roughly 40 mini cookies OR 24 regular sized.

Recipe Time: 30 minutes.


1 Stick of Unsalted Butter

¼ Cup Granulated Sugar

½ Cup Brown Sugar

---

1 Tsp. Vanilla Extract

90g (¼ Cup and 1 Tbsp.) Pumpkin Pure

---

1 Egg

---

250g (2 Cups) AP Flour

¼ Tsp. Kosher Salt

1 Tsp. Cinnamon

¼ Tsp. Clove

¼ Tsp. Allspice

¼ Tsp. Nutmeg

¼ Tsp. Mace

---

Sprinkles of your choice.


  1. Preheat oven to 375℉.

  2. In a microwave safe bowl, heat butter until just melted (do not heat until boiling!).

  3. Add both sugars to the butter and whisk until no lumps remain.

  4. Add pumpkin and vanilla, mix thoroughly.

  5. Add the egg, whisking to combine. Mixture should be glossy.

  6. In the same bowl add flour, salt and all of the spices. You will need a wooden spoon to thoroughly combine ingredients. Mix until just combined.

  7. In a separate small bowl pour in your sprinkles.

  8. Using a cookie scoop (or spoon!), scoop out a portion of the dough and then roll in your hands to form an even ball.

  9. Place the ball in your bowl of sprinkles. Roll around until the ball is fully coated.

  10. Continue this process with the rest of the dough then placing them on a lined baking sheet, 2 inches apart.

  11. Bake for 7 minutes (this time might be longer if you're making larger cookies).

Baking Tip: If you are unsure how long to bake your cookies due to their size, do a tester! For your first batch, only do 1 or 2 cookies so you can really tune into how long they need to bake in your oven without ruining the whole batch.
